Garnish Preparation
Cook bacon
Preheat oven to 400°F (200°C). Place two thick-cut bacon strips on a rack set over a baking sheet lined with foil. Bake 12–18 minutes until crisp but still slightly flexible for skewering. Remove and drain on paper towels; keep warm.
Assemble olive skewer
Skewer three blue cheese stuffed olives onto a cocktail pick. If you prefer a larger garnish, stack olives and one piece of cooked bacon folded over the skewer.
Trim and rinse the celery stalk; reserve for garnish. Cut a wedge from the lemon for the rim and garnish.
Rim (optional)
If rimming, rub the glass lip with the lemon wedge, then dip the edge into a shallow dish of coarse celery salt until a thin, even rim is formed.
Cocktail Assembly
Fill a tall Collins or pint glass with ice (about 1 cup).
Stir the mixture gently for 15–20 seconds (do not vigorously shake — you want a slightly silky texture but not aerated). Alternatively, roll between two mixing glasses 3 times for extra dilution and chill.
Serve immediately with a straw and an additional napkin for the bacon garnish.
