Salad Preparation

Prepare the Shrimp

Preheat your grill to medium-high heat. Season the shrimp with salt, pepper, and a sprinkle of dried oregano. Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from the grill and set aside.

Fry the Chickpeas

Drain and rinse the chickpeas. Pat them dry with a paper towel. In a skillet over medium heat, add a drizzle of olive oil and sauté the chickpeas until they are golden brown and crispy, about 8-10 minutes. Season with salt and set aside.

Chop the Vegetables

Dice the tomatoes and cucumber. Thinly slice the red onion. In a large bowl, combine the romaine lettuce, tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.

Add Grilled Shrimp and Chickpeas

Add the grilled shrimp and fried chickpeas to the bowl with the salad ingredients. Gently toss to combine.

In a small bowl, whisk together the golden balsamic vinegar, olive oil, honey, salt, and pepper until well combined.
