Cooking Instructions
Prepare the Rice
Cook the Mexican rice according to package instructions. Once cooked, set aside and keep warm.
Sauté the Shrimp
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add Shrimp
Add the jumbo shrimp to the skillet, season with salt and black pepper, and cook for 3-4 minutes until pink and cooked through.
Finish with Butter
Reduce the heat to low and add the unsalted butter and lemon juice to the skillet. Stir gently until the butter is melted and the shrimp are well coated.
Prepare the Salad
In a bowl, mix the mixed greens and cherry tomatoes. Drizzle with olive oil and season with salt and pepper to taste.
Serve
To serve, place a generous portion of Mexican rice on each plate, top with the garlic butter shrimp, and serve the salad on the side. Provide drawn garlic butter for dipping.
