Prepare the Top Sirloin
Heat olive oil in a skillet over medium-high heat. Season the top sirloin with salt, black pepper, and chili powder. Sear the sirloin on both sides until desired doneness (about 4-5 minutes per side for medium). Remove from heat and let rest.
Make the Cheese Enchilada
Preheat oven to 350°F (175°C). In a separate skillet, warm the corn tortillas slightly to make them pliable. Fill each tortilla with cheddar cheese, roll them up, and place them in a baking dish. Pour enchilada sauce over the rolled tortillas and sprinkle with extra cheese if desired. Bake for 15-20 minutes or until cheese is bubbly and golden.
Plating
Slice the rested top sirloin and place it on a plate. Serve the cheese enchilada alongside the sirloin. Enjoy!
