Prepare the Caramel
In a medium saucepan over medium heat, add the granulated sugar. Stir continuously until the sugar melts and turns a golden brown color. Quickly pour the caramel into a round baking dish, tilting to coat the bottom evenly. Set aside to cool and harden.
Mix the Flan Mixture
In a large mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, and vanilla extract until well combined and smooth.
Combine and Bake
Pour the flan mixture over the hardened caramel in the baking dish. Place the dish in a larger baking pan, and fill the larger pan with hot water halfway up the sides of the flan dish. Bake at 350°F (175°C) for about 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.
Cool and Serve
Remove the flan from the oven and let it cool in the water bath for 10 minutes. Then, take it out of the water and let it cool completely at room temperature. Refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges, invert onto a serving plate, and pour any remaining caramel on top.
