Preheat and prep

Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper; lightly grease parchment and dust pans with a little flour, tapping out excess.

Whisk dry ingredients: In a large bowl, sift or whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg and ginger until evenly combined.

Combine wet ingredients: In a separate bowl, whisk the eggs, vegetable oil, milk, melted butter and vanilla extract until smooth.

Mix batter: Pour wet mixture into dry ingredients and stir gently until just combined. Fold in grated carrots, chopped nuts, and drained crushed pineapple (if using). Do not overmix; batter will be thick and moist.

Bake: Divide batter evenly between prepared pans. Bake in preheated oven for 28–35 minutes, rotating pans halfway through, or until a toothpick inserted in center comes out with a few moist crumbs (not wet batter).

Cool: Let cakes cool in pans on a wire rack for 10–15 minutes. Run a knife around edges, invert onto rack, remove parchment, and cool completely before frosting (1–1.5 hours).

Cream Cheese Frosting

Bring cream cheese to workable temperature: Remove cream cheese from fridge 20–30 minutes before mixing so it softens but is still cool (prevents runny frosting).

Beat base: In a large bowl or stand mixer fitted with a paddle attachment, beat the cold cream cheese and softened butter on medium speed until smooth and homogenous, about 1–2 minutes.

Add sugar gradually: With mixer on low, add powdered sugar 1 cup at a time until incorporated, then increase speed to medium and beat until fluffy, about 1–2 minutes. Scrape bowl as needed.

Finish and taste: Add vanilla extract, salt and optional lemon juice; mix for 10–20 seconds more. Taste and adjust salt or lemon to balance sweetness. If frosting is too soft, chill 15–30 minutes before using.

Caramel Popcorn Topping

Prepare popcorn: Ensure popcorn is fresh, cooled, and free of unpopped kernels. Place in a large heatproof bowl.

Make caramel: In a small saucepan over medium heat, combine butter, corn syrup and brown sugar. Stir constantly until butter melts and sugar dissolves. Bring to a gentle boil and let simmer, without stirring, for 2–3 minutes until mixture thickens slightly and is glossy.

Finish caramel: Remove from heat and stir in vanilla, salt and baking soda. The mixture will foam slightly; this lightens the caramel and makes it easier to coat the popcorn.

Coat popcorn: Immediately pour caramel over popcorn and quickly toss with a spatula to coat evenly. Spread caramel-coated popcorn on a parchment-lined baking sheet to cool and set, separating clumps if desired. Allow to cool completely, about 20–30 minutes, until crisp.

Assembly & Garnish

Level cakes: If cake crowns are domed, level them with a serrated knife so layers are even.

Frost: Place first cake layer on cake board or serving plate. Spread about one-third of the cream cheese frosting in an even layer. Place second cake on top and use remaining frosting to crumb-coat the cake (a thin layer). Chill 15 minutes, then apply final thick coat of frosting smoothing the sides and top with an offset spatula.

Add toasted nuts: Press toasted chopped walnuts or pecans around the sides of the frosted cake and sprinkle a few on top for texture.

Top with caramel popcorn: Gently arrange cooled caramel popcorn on top of the cake just before serving so it remains crunchy. Gently press a few pieces into the frosting so they adhere.

Optional decoration: Sprinkle extra grated carrot lightly over popcorn or pipe a few frosting rosettes around the top edge to corral the popcorn.

Serve: Slice with a sharp knife (wipe blade between cuts to keep frosting tidy). Keep leftovers refrigerated (cream cheese frosting requires refrigeration). If storing with popcorn topping, consider storing popcorn separately and adding just before serving to maintain crispness.
