Add Liquids

Pour in the red wine and bring to a boil. Reduce heat and let simmer until reduced by half, about 10 minutes. Add the stock, cream, salt, and pepper, stirring well. Simmer for an additional 5 minutes until slightly thickened.

Cook the Eggs

In a separate pot, bring water to a gentle simmer. Crack the eggs into small bowls and gently slide them into the simmering water. Poach the eggs for 3-4 minutes, or until the whites are set but yolks are still runny.

Assemble the Dish

To serve, place a poached egg on a plate and spoon the sauce over the top. Garnish with chopped parsley.
