Make the Ice Cream Base
In a separate bowl, whisk the egg yolks until smooth. Slowly pour about 1 cup of the hot cream mixture into the yolks, whisking constantly to temper the eggs. Then pour the egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
Flavoring
If making coffee ice cream, stir in the instant coffee granules until fully dissolved. For vanilla ice cream, add the vanilla extract. Mix well.
Chill the Mixture
Remove the saucepan from heat and let the mixture cool at room temperature for about 30 minutes. Then cover and refrigerate for at least 4 hours or overnight until thoroughly chilled.
Churn the Ice Cream
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze
Transfer the churned ice cream to an airtight container and freeze for at least 4 hours to firm up before serving.
