Glass Preparation

Chill glass and sugar the rim

Place a coupe or martini glass in the freezer for a few minutes to chill. Pour the superfine sugar onto a small plate. Run the lemon wedge around the outer edge of the glass rim to moisten it, then invert the glass and dip the outer rim in the sugar so a thin, even sugared rim forms. Set the glass aside to let the sugar set while you mix the cocktail.

Combine ingredients

Add the cognac, Bénédictine (or orange liqueur if using Cointreau), fresh lemon juice, and optional simple syrup into a cocktail shaker.

Shake with ice

Fill the shaker with the ice cubes. Secure the lid and shake vigorously for 12–15 seconds, until the shaker is very cold and well chilled. This both chills and dilutes the drink to proper balance.

Double-strain and serve

Remove the chilled glass from the freezer. Double-strain the cocktail into the prepared glass using a Hawthorne strainer and a small fine-mesh strainer to catch any ice chips and pulp for a clean, silky texture.

Garnish

Optionally express a lemon twist over the drink and drop it in or place the used lemon wedge on the rim. Serve immediately.
