Beef Patties
Toppings & Assembly
QB Sauce
Method
Beef Patties
Mix and form
Place the ground chuck in a mixing bowl. Add Worcestershire sauce, kosher salt, and freshly ground black pepper. Gently combine with your hands or a spoon until just incorporated — do not overwork. Divide into four equal portions and form into 2 wide, thin patties per burger (for a total of 4 patties if making 2 double burgers). Make patties about 4 inches in diameter and slightly larger than the buns; press a shallow dimple in the center of each patty to keep them from doming while cooking.
Cook
Heat a heavy skillet or griddle over medium-high heat. Add vegetable oil and swirl to coat. When oil is shimmering and the pan is hot, place patties on the skillet without crowding. Cook for 2–3 minutes on the first side until a deep brown crust forms. Flip and cook 1.5–2 minutes more. If making double patties per sandwich, stack the second patty on top of the first in the final 30 seconds and place an American cheese slice on top to melt. Remove patties to a plate and tent with foil to rest for 2 minutes.
QB Sauce
In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, sweet pickle relish, apple cider vinegar, granulated sugar, paprika, and salt until smooth. Taste and adjust seasoning — add a little more vinegar for tang, sugar for sweetness, or relish for texture. Refrigerate sauce for at least 10 minutes to let flavors meld. Makes enough for two burgers.
Toppings & Assembly
Assemble burgers
Spread about 1.5 tablespoons (or to taste) of QB Sauce on the bottom half of each toasted bun. Place shredded lettuce over the sauce, then add two tomato slices, a stack of one or two cheese-topped patties (depending on whether you made single or double patties), a few pickle slices, and some thinly sliced red onion. Spread a small amount of sauce on the top bun and close the burger. Serve immediately while hot.
