Thaw and pat dry

If using frozen shrimp, thaw fully in the refrigerator or under cold running water. Drain well and pat shrimp very dry with paper towels. Excess moisture prevents proper coating adhesion and causes oil splatter.

Marinate in buttermilk

In a medium bowl, whisk the buttermilk with the egg until combined. Add 1/2 teaspoon of the kosher salt and 1/4 teaspoon black pepper to the buttermilk mixture. Add the shrimp, toss to coat, cover, and refrigerate for 20–30 minutes (up to 1 hour). The buttermilk tenderizes and helps the coating stick.

Dry mix

In a shallow bowl or rimmed plate, combine the flour and cornstarch and whisk to remove lumps. Add the remaining 1 teaspoon kosher salt, 3/4 teaspoon black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Mix well to make an even seasoned flour.

Crunchy mix

In a separate shallow bowl, combine the panko breadcrumbs and grated Parmesan. Break up any large panko pieces so the mixture is relatively fine—this gives an even popcorn-size crumb.

Set up dredging line

Place the bowls in a line: seasoned flour, buttermilk-marinated shrimp (use a slotted spoon), then panko-Parmesan. Reserve the used buttermilk for dipping if you like extra coverage.

Coating the Shrimp

Working in small batches (about 10–12 shrimp at a time depending on pan size), dredge each shrimp first lightly in the seasoned flour, shaking off excess, then dip briefly back into the buttermilk (or the egg-buttermilk bowl) to re-wet, then press into the panko-Parmesan mixture to coat thoroughly. Press crumbs onto the shrimp so they stick; set coated shrimp on a wire rack (not touching) to rest for 5–10 minutes — this helps the coating adhere and reduces crumb loss in the oil.

Heat oil

Pour oil into a heavy, deep skillet or Dutch oven to a depth of about 1.5–2 inches (approximately 3–4 cups depending on vessel). Heat over medium-high until the oil reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a small breadcrumb — it should sizzle and turn golden in about 30–45 seconds.

Fry in batches

Fry the coated shrimp in small batches so the oil temperature stays close to 325–350°F (165–175°C). Gently add shrimp to the oil with a slotted spoon or spider, taking care not to overcrowd. Fry for 1.5–2.5 minutes, turning once, until golden brown and cooked through (shrimp will be opaque and firm). Very small shrimp cook quickly—watch closely to avoid overcooking.

Drain and season

Remove shrimp with a slotted spoon to a wire rack set over a baking sheet or to paper towels. While still hot, sprinkle with a light pinch of salt to taste. Let cool for 1–2 minutes before serving so the coating firms up.

Serve

Arrange popcorn shrimp on a serving platter. Garnish with chopped parsley and lemon wedges. Serve immediately with spicy remoulade or sriracha mayo for dipping. For best texture, enjoy within 10–15 minutes of frying.

Storage note: Keep leftover shrimp in an airtight container in the refrigerator for up to 2 days. Reheat in a 375°F (190°C) oven on a wire rack for 6–8 minutes to restore crispness—do not microwave, which will make them soggy.
