Prepare Cocktail
Measure and add
Add 2 oz gin, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 0.5 oz fresh orange juice, and 2 dashes Angostura bitters into a cocktail shaker.
Add egg white (optional)
If using, add 1/2 of an egg white to the shaker. This gives the Ponyshoe a silky texture and a foamy top.
Dry shake
Without ice, seal the shaker and shake vigorously for 15–20 seconds to emulsify the egg white and integrate ingredients.
Wet shake
Open the shaker, add ice (about 6 large cubes), reseal and shake vigorously for another 10–15 seconds until the shaker is cold to the touch and slightly frosted.
Double strain
Double-strain the cocktail through a Hawthorne strainer and fine mesh strainer into a chilled coupe or Nick & Nora glass to remove ice shards and produce a smooth texture.
Garnish and finish
Express the oils from an orange peel over the drink by holding the peel over the surface and giving it a sharp twist, then rub the peel along the glass rim and drop it in. Add a maraschino cherry on a pick if desired.
