Method

Prepare seasoned ground beef

Cook aromatics

Heat a large skillet over medium-high heat. Add 1 tsp vegetable oil. When shimmering, add the finely chopped onion and cook 2–3 minutes until softened. Add the minced garlic and cook 30 seconds until fragrant.

Brown beef

Add 1 lb ground beef to the skillet. Break it up with a spatula and cook 4–6 minutes until mostly browned.

Season & simmer

Stir in 1 tbsp chili powder, 1/2 tsp ground cumin, 1/2 tsp smoked paprika, 3/4 tsp kosher salt, and 1/4 tsp black pepper. Add 1 tbsp tomato paste and 3 tbsp water, stir to combine, and reduce heat to medium-low. Simmer 3–4 minutes until the sauce thickens and flavors meld. Taste and adjust salt/pepper. Remove from heat and set aside.

Assemble chips, beans & cheese

Preheat the oven to 425°F (220°C). Arrange half of the tortilla chips in an even layer on a large baking sheet or an ovenproof platter (leaving room for a second layer).

Scatter half of the shredded cheddar and half of the Monterey Jack evenly over the chips. Distribute half of the cooked seasoned beef, half of the black beans, and half of the corn over the cheese layer. Add the remaining chips in a second layer, then top with the remaining cheeses, beef, beans, and corn so toppings are layered and visible.

Bake & melt

Place the assembled nachos in the preheated oven and bake 6–8 minutes, until the cheese is fully melted and bubbling and toppings are warmed through. For a browned top, switch to broil for 30–60 seconds, watching closely to avoid burning.

Prepare fresh toppings & sauces

While nachos bake, combine 1/2 cup sour cream with 1 tbsp lime juice and a pinch of salt to make a tangy crema; stir until smooth.

Dice 1/2 cup roma tomato, thinly slice 1 jalapeño, and thinly slice green onions. Chop cilantro. If using guacamole or avocado, have it ready.

Finish & serve

Remove nachos from the oven. Immediately spoon dollops of sour-cream crema and 1/2 cup mild salsa around the tray. Sprinkle diced tomatoes, sliced jalapeño, green onion, cilantro, and pickled jalapeños (if using) evenly over the top. Add guacamole/avocado and crumbled queso fresco as desired.

Serve hot on the baking sheet or transfer to a large platter. Provide extra salsa, sour cream, and lime wedges at the table. Leftovers can be reheated briefly in the oven to re-melt cheese.
