Method
Hot Dog Sausage
Optional: Brown for texture
After simmering, remove the sausages and pat them dry with a paper towel. Heat 1 tablespoon oil in a skillet over medium-high heat. Add the sausages and sear, turning occasionally, until lightly browned and the casing is slightly crisp, about 1–2 minutes per side. Remove and keep warm.
Buns & Butter
Spread about 1/2 tablespoon unsalted butter on the inside of each bun. Warm a clean skillet or griddle over medium heat and toast the buttered cut sides of the buns until golden brown and slightly crisp, about 1–2 minutes. Alternatively, butter the outsides and toast whole buns in the skillet.
Sauerkraut & Toppings
While sausages simmer, drain sauerkraut well—press lightly in a sieve or with paper towels to remove excess liquid. If you prefer warmed sauerkraut, heat it briefly in a small saucepan for 2–3 minutes, or warm in microwave for 30–45 seconds.
Assemble each German Dog: place one sausage in a toasted bun. Spoon about 1/4 cup (or to taste) of drained sauerkraut over the sausage. Add 1 teaspoon yellow or German mustard per dog. Sprinkle about 1 tablespoon diced white onion over the top. Add 1/2 teaspoon sweet pickle relish if using.
Pan-fry Finish (optional but recommended)
If you like a crisper, more caramelized finish, return the assembled dogs to the pan (open-faced) for 1–2 minutes over medium heat to meld the flavors and warm the toppings. Watch carefully so buns do not burn.
Serve
Serve immediately while hot. Provide extra mustard and a side of potato salad or fries if desired.
