Mix dry ingredients

In a large bowl whisk together the flour, granulated sugar, baking powder, and salt until evenly combined and aerated.

Mix wet ingredients

In a separate medium bowl whisk the milk, heavy cream, eggs, melted butter, and vanilla extract until smooth.

Combine batter

Make a well in the dry ingredients and pour the wet mixture in. Gently fold with a spatula just until combined — small lumps are fine. Do not overmix. Let the batter rest 5–10 minutes while preparing the griddle and meat.

Preheat griddle

Heat a large nonstick skillet or griddle over medium-low to medium heat (about 350°F / 175°C if using an infrared thermometer). Brush with the unsalted butter and vegetable oil to coat the surface.

Cook pancakes

For each pancake, pour about 1/2 cup batter onto the griddle to make a fluffy pancake ~4–5 inches across. Cook undisturbed until bubbles form across the surface and edges look set, about 2–3 minutes. Flip and cook the second side until golden and cooked through, about 1–2 minutes more. Repeat to make two large, fluffy pancakes (or more if you make smaller ones). Keep finished pancakes warm on a low oven tray (200°F/95°C) while you finish.

Choice of Meat

Cook bacon

For bacon: Place strips in a cold skillet in a single layer. Cook over medium heat, turning occasionally, until crisped and browned to your liking, about 8–12 minutes depending on thickness. Transfer to a paper towel–lined plate to drain.

Cook sausage patties

For breakfast sausage patties: Heat a skillet over medium heat and add a small amount of oil if needed. Cook patties 3–4 minutes per side until browned and cooked through (internal temperature 160°F / 71°C). Drain on paper towels.

For turkey links: Brown over medium heat, turning frequently, for 8–10 minutes until cooked through (internal temperature 165°F / 74°C).

Cook Canadian bacon

For Canadian bacon: Sear slices in a hot skillet 1–2 minutes per side until warmed and lightly browned.

Timing and holding

If cooking multiple meats, use an oven set to low (200°F/95°C) to keep cooked meat warm while finishing pancakes. Wipe out the skillet between different meats if flavors cross or if excess grease accumulates.

Finishes & Serving

Assemble Firehouse Special

Place two warm sweet cream pancakes on each plate. Arrange your chosen meat beside or on top of the pancakes as desired (two or three strips/slices/patties per plate is standard).

Garnish and serve

Drizzle maple syrup over the pancakes, dust with powdered sugar if using, and add fresh fruit on the side if desired. Serve immediately while hot.

Notes

The recipe yields two large fluffy sweet cream pancakes per serving. For multiple servings, scale batter and meat proportionally. Batter can be held refrigerated for up to 24 hours; if cold, let rest at room temperature 15–20 minutes before cooking.
