Prepare meat (if not pre-cooked)
If using raw breakfast sausage or raw bacon, cook it first: for bacon, cook 3–5 minutes per side in a medium skillet over medium heat until browned and crisp to your liking; drain on paper towel. For a sausage patty, shape and cook 4–5 minutes per side until internal temperature reaches 160°F (71°C). If using pre-cooked ham or deli meat, briefly warm in the pan 30–60 seconds per side.
Cook egg
In the same skillet over medium (wipe out excess oil if too much), add a small pat of butter if needed. Crack the egg into the skillet and cook to your preference: sunny-side up (about 2–3 minutes until whites set), over-easy (cook 2 minutes, flip gently, 20–30 seconds), or over-medium (2 minutes, flip, 45–60 seconds). Season egg with 1/4 tsp salt and 1/8 tsp black pepper while cooking.
Assemble sandwich
Place one toasted sourdough slice buttered-side-up on a plate. Add the warmed cooked meat on top of the bread. Place the cheddar slice over the hot meat so it begins to melt. Gently transfer the cooked egg on top of the cheese. Top with the second slice of toasted sourdough, buttered-side-down. Press gently and let rest 30 seconds so cheese melts fully.
Potato
Roasted cubed potatoes
Preheat oven to 425°F (220°C) if roasting. Toss 1/2 cup cubed potatoes with 1 tbs olive oil, 1/8–1/4 tsp salt and 1/8 tsp pepper. Spread in a single layer on a baking sheet and roast 20–25 minutes, turning once, until golden and tender. Serve hot alongside the sandwich.
Hand-cut fries (skillet or oven)
For skillet fries: cut potatoes into sticks, toss with 1 tbs olive oil, salt and pepper. Heat skillet over medium-high, add potatoes, and cook 8–12 minutes, stirring occasionally, until crisp and golden. For oven fries: follow the roasted potatoes method but cut potatoes into fry shapes and increase roast time to 25–30 minutes, turning once.
