We make our own bruschetta tomatoes in house with fresh herbs and tomatoes. These are served with 8 slices of toasted ciabatta bread.

Method
Bruschetta Tomato Topping
Prepare Tomatoes
Core and halve tomatoes. Gently squeeze or spoon out seeds and excess juice, then finely dice the tomato flesh to yield about 2 cups. Place diced tomatoes in a medium mixing bowl.
Dress the Mixture
Add 3 tablespoons extra-virgin olive oil and 1 tablespoon red wine vinegar to the tomato mixture. Season with 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, and red pepper flakes if using. Gently toss until everything is evenly coated.
Rest to Marry Flavors
Let the mixture sit at room temperature for 20–30 minutes to allow the flavors to meld and for the tomatoes to release a little juice. Taste and adjust seasoning with additional salt, pepper, or a splash more vinegar or olive oil as needed.
Toasted Ciabatta & Assembly
Prepare and Toast Bread
Preheat a broiler or toaster oven to high (or heat a grill or cast-iron skillet to medium-high). Brush both sides of the 8 ciabatta slices lightly with olive oil (about 2 tablespoons total). Place slices on a baking sheet and broil 2–3 inches from heat for 1.5–2 minutes per side, or until crisp and golden with light char spots. If using a skillet, toast 1.5–2 minutes per side until golden.
Finish Toasts
Remove toasts from heat. While still warm, rub the cut side of the halved garlic clove over the top surface of each toast for a subtle garlic flavor. Sprinkle lightly with the fine sea salt.
Assemble Bruschetta
Spoon the rested tomato mixture onto the warm toasted ciabatta slices, dividing evenly among the 8 slices (about 1/4 cup per slice). Allow any excess juice to drain back into the bowl rather than making the bread soggy; use a slotted spoon for wetter tomatoes if necessary.
Optional Finish and Serve
If desired, sprinkle about 2 tablespoons total grated Parmesan or shaved Pecorino evenly over the toasts. Serve immediately so the bread remains crisp. Leftover topping can be refrigerated up to 2 days; toast slices just before serving.
