Form patties

Divide the ground beef into three equal portions (about 2 ounces / 56 g each). Lightly shape each portion into a thin patty slightly larger than the buns. Do not overwork the meat.

Season

Season both sides of each patty with the salt and black pepper.

Cook patties

Heat a skillet over medium-high heat and add the neutral oil. When shimmering, add patties and cook 2-3 minutes per side for medium (adjust time for desired doneness). In the last 30–45 seconds of cooking, place a cheese slice on each patty and cover the skillet to melt the cheese.

Toast buns

While patties cook, spread softened butter on the cut sides of the mini slider buns. In a separate pan over medium heat or under a broiler, toast the buns (cut side down) until golden, about 1–2 minutes.

Assemble

On the bottom bun, spread about 1 teaspoon ketchup and 1/3 teaspoon mustard. Place the cheeseburger patty with melted cheese on top, add a slice of dill pickle and a few thin onion slices, then top with the bun crown. Repeat for all three sliders.

Serve warm. Provide extra ketchup and mustard on the side if desired.

Buffalo Chicken Sliders (makes 3 sliders)

Prepare buffalo chicken

In a bowl combine the shredded cooked chicken with the buffalo wing sauce, salt, and black pepper. Toss until the chicken is evenly coated.

Heat filling

Warm the sauced chicken in a skillet over medium heat for 2–3 minutes until heated through. Stir in 1 tablespoon of the ranch/blue cheese dressing to slightly mellow the heat (optional).

Toast buns

Spread softened butter on the cut sides of the mini buns and toast cut side down in a skillet or under a broiler until lightly golden, about 1–2 minutes.

Assemble

On the bottom bun place about 1/4 cup (heaped) of the buffalo chicken mixture. Sprinkle about 1 tablespoon shredded cheese over the chicken, add a small celery stick or a couple celery sticks on the side for crunch, then top with a drizzle (about 1 teaspoon) of remaining ranch/blue cheese dressing and the bun crown. Repeat for all three sliders.

Serve immediately while warm, with extra dressing for dipping if desired.

Pulled Pork Sliders (makes 3 sliders)

Warm pulled pork

Place the pulled pork and barbecue sauce in a small saucepan or skillet over medium heat. Stir and warm for 3–4 minutes until heated through and the sauce is slightly glossy. If pork is very dry, add 1–2 tablespoons water while warming.

Toast buns

Spread softened butter on the cut sides of the buns and toast cut side down in a skillet or under the broiler until golden, about 1–2 minutes.

Assemble

Place about 1/4 cup warmed pulled pork onto each bottom bun. Spoon a little extra barbecue sauce if desired. Top the pork with roughly 2 tablespoons coleslaw to add creaminess and crunch, add pickled red onion slices if using, then cap with the top bun. Repeat for all three sliders.

Serve warm. Offer extra barbecue sauce and additional coleslaw on the side.
