Prep the pork

Pat the pork shoulder dry with paper towels. Trim any excessively large exterior fat cap, leaving a thin layer for flavor.

Make the rub

In a small bowl combine kosher salt, black pepper, smoked paprika, brown sugar, garlic powder, onion powder, and ground cumin. Mix until even.

Season

Rub the olive oil over the pork to help the spice mix adhere, then massage the dry rub evenly over all sides of the pork. Let rest at room temperature for 20–30 minutes (or refrigerate overnight, covered, for more flavor).

Cook (slow-cooker method)

Place the seasoned pork into a 4–6 quart slow cooker. Pour the apple cider vinegar and the stock around (not directly over) the pork to preserve the rub on top. Set the slow cooker to LOW and cook for 8–9 hours, or HIGH for 4–5 hours, until the pork is fork-tender and pulls apart easily.

Or oven method

Preheat oven to 300°F (150°C). Place pork in a roasting pan with a rack or a Dutch oven. Add the apple cider vinegar and stock to the pan. Cover tightly with foil (or lid) and roast for 3.5–4 hours, or until fork-tender.

Shred and finish

When pork is tender, transfer to a cutting board or shallow pan. Use two forks (or meat claws) to shred the meat into bite-sized pieces, discarding any large chunks of fat. Stir in 1/4 to 1/2 cup barbecue sauce (to taste) and 2–3 tablespoons of the cooking juices from the slow cooker or oven to keep the meat moist. Taste and adjust seasoning with salt, pepper, or more barbecue sauce.

Prepare buns

Split the mini slider buns. Spread a thin layer of softened butter on the cut sides. Heat a large skillet or griddle over medium heat and toast the cut sides of the buns until golden, 1–2 minutes. Alternatively, bake cut-side up at 375°F (190°C) for 5–7 minutes.

Warm the pork

If the shredded pork has cooled, warm it gently in a skillet over low heat with a splash of cooking juices or stock and a tablespoon of barbecue sauce until hot, about 3–5 minutes.

Build the sliders

Place about 1.5–2 ounces (roughly 2–3 tbs) of shredded pork on the bottom half of each bun. Top each with a small spoonful (about 1 teaspoon) of additional barbecue sauce if desired, a tablespoon of coleslaw, and a slice of dill pickle. Finish with the bun top.

Garnish & serve

Arrange sliders on a platter and garnish with chopped cilantro or parsley if using. Serve immediately while warm. Provide extra barbecue sauce and napkins.
