Chicken Slider Filling
Prepare chicken
Trim excess fat from the chicken thighs and pat them dry with paper towels. If thighs are large, cut each into 2–3 pieces so they fit slider bun width (aim for 3 roughly even portions per slider total yield).
Season
In a small bowl mix kosher salt, black pepper, smoked paprika, and garlic powder. Sprinkle the seasoning evenly over both sides of the chicken pieces.
Cook chicken
Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. When the butter has melted and begins to foam and oil shimmers, add the chicken pieces in a single layer (do not overcrowd; cook in batches if necessary). Sear 3–4 minutes on the first side until golden brown, then flip and cook 3–4 minutes more until internal temperature reaches 165°F (74°C). Total cooking time will vary with piece thickness. Remove chicken to a plate and let rest 3–5 minutes, then thinly slice or lightly shred so each slider gets an even amount.
Sauce and Finish
Make the sauce
In a small bowl whisk together mayonnaise, yellow mustard, honey, hot sauce, and lemon juice until smooth. Taste and adjust: add more hot sauce for heat, more honey for sweetness, or a pinch of salt if desired.
Toss chicken with sauce
Add about 2 tablespoons of the prepared sauce to the sliced/shredded chicken and toss gently to coat. Reserve remaining sauce for spreading on buns.
Prep pickles and herbs
If pickle slices are large, quarter them. Chop fresh parsley and set aside for garnish.
Buns & Assembly
Toast buns
Heat a clean skillet over medium heat. Spread 1 tablespoon butter across the cut sides of the 3 slider buns. Place buns butter-side down in the skillet and toast 1–2 minutes until golden and slightly crisp. Remove and keep warm.
Assemble sliders
Spread a thin layer of the reserved sauce on both top and bottom of each toasted bun. Place a small lettuce leaf onto each bottom bun, divide the sauced chicken evenly among the three buns, top each with two pickles (or equivalent) and a sprinkle of chopped parsley, then close with the top bun.
Serve
Arrange sliders on a plate and serve immediately. Serve extra sauce on the side if desired.
