Prepare the Noodles

Cook the Lo Mein noodles according to the package instructions. Drain and set aside.

Scramble the Eggs

In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium heat. Beat the eggs in a bowl and pour them into the skillet. Scramble until fully cooked, then remove and set aside.

Sauté the Vegetables

In the same wok, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and sauté for about 30 seconds until fragrant. Add the yellow onion and cook until translucent.

Add the Rest of the Vegetables

Add the carrots, mushrooms, snow peas, bean sprouts, cabbage, and bok choy to the wok. Stir-fry for 3-5 minutes until the vegetables are tender yet crisp.

Combine Ingredients

Add the cooked Lo Mein noodles and scrambled eggs back into the wok. Pour in the soy sauce, and season with salt and black pepper. Toss everything together until evenly mixed and heated through.

Serve

Remove from heat and serve hot. Enjoy your Vegetable Lo Mein!
