Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook it according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold it into the rice. Let it cool to room temperature.

Prepare the Vegetables

Julienne the cucumber, carrot, avocado, and red bell pepper into thin strips.

Assemble the Roll

Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange the julienned vegetables in a line across the center of the rice.

Roll the Sushi

Using the bamboo mat, carefully roll the nori away from you, keeping the filling tight. Once rolled, use a sharp knife to slice the roll into 6-8 pieces.
