Cooking the Rice

Rinse the rice under cold water until the water runs clear. In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker's instructions until the rice is tender.

Seasoning the Rice

Once the rice is cooked, transfer it to a large bowl. While the rice is still warm, sprinkle salt and mix gently with a spatula. Let it cool slightly.

Shaping the Onigiri

Wet your hands with water to prevent sticking. Take a handful of rice (about 1/4 cup) and flatten it slightly in your palm. Place a piece of umeboshi or a spoonful of salmon flakes in the center and mold the rice around the filling to form a triangle shape. Repeat until all ingredients are used.

Wrapping with Nori

Cut nori sheets into strips. Wrap a strip around each onigiri, leaving the top exposed. Sprinkle sesame seeds and chopped green onions on top for garnish.

Serve the onigiri immediately with soy sauce on the side for dipping.
