1. Prepare the Steak

Season the steak with salt and black pepper on both sides. Let it marinate for about 15 minutes.

2. Sear the Steak

In a large skillet, heat the vegetable oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare. Remove the steak from the skillet and let it rest.

3. Cook the Vegetables

In the same skillet, add the chopped onion, garlic, and ginger. Sauté for 2-3 minutes until the onions are translucent. Add the sliced bell pepper and continue to cook for another 2 minutes.

4. Add the Curry Flavor

Stir in the curry powder and cook for 1 minute until fragrant. Pour in the coconut milk and bring to a simmer.

5. Combine and Finish

Slice the rested steak against the grain and return it to the skillet. Stir to coat the steak with the curry sauce. Cook for an additional 2-3 minutes until heated through.

6. Serve

Garnish with fresh cilantro and serve hot with rice or naan.
