Prep
Chill glass
Place a Collins or highball glass in the freezer for 5–10 minutes or fill with ice to chill while preparing ingredients.
If using house flavored syrup (ginger, hibiscus, rosemary-citrus, etc.), have it at hand. To make quick ginger syrup: simmer equal parts sugar and water with a 1–2 inch sliced fresh ginger root for 5 minutes, cool and strain.
Assembly
Build the soda
Add ice to the chilled glass until roughly 3/4 full (about 1 cup). Pour in the citrus juice (0.5 oz) and simple syrup (0.5 oz).
Add the house flavored syrup (0.75 oz). If using bitters, add 2 dashes now. Gently stir once or twice with a bar spoon to combine the syrups and citrus with the ice.
Slowly top with 8 oz club soda or sparkling water so the drink remains effervescent. Give a single gentle stir to integrate the soda with the flavor base.
Finish & garnish
Express oils from a citrus zest or peel strip over the drink and drop it in. Slap the herb sprig between your palms to release aroma and place it as a garnish. Add a citrus wheel or wedge on the rim. Serve immediately with a straw if desired.
Notes
Adjust sweetness by increasing or decreasing the simple syrup or flavored syrup. Swap the flavored syrup to change the daily house soda profile (e.g., ginger for spicy, hibiscus for floral-tart, rosemary-citrus for herbaceous). For a low-calorie version, omit simple syrup and use 0.75 oz flavored syrup made with a sugar alternative.
