For the drink
Brew and cool tea
Brew 1 cup of strong black tea using about 1 tea bag (or 1 teaspoon loose tea) per cup of near-boiling water. Steep 3–5 minutes for a full flavor, then remove the bag or strain leaves. Allow the tea to cool to room temperature, or chill in the refrigerator for 20–30 minutes. (If short on time, brew with slightly less water to concentrate and then cool with ice.)
Make or measure simple syrup
If using homemade simple syrup: combine equal parts granulated sugar and water (e.g., 1/2 cup sugar + 1/2 cup water) in a small saucepan, bring to a simmer, stirring until the sugar dissolves, then cool. Alternatively use honey syrup (equal parts honey and warm water) for a different flavor. Measure 1/2 cup syrup for the recipe.
Juice lemons
Juice fresh lemons until you have 1/2 cup (about 2–3 medium lemons). Strain out seeds and excessive pulp if desired for a smoother drink.
Combine
In a pitcher, combine the cooled tea (1 cup), fresh lemon juice (1/2 cup), and simple syrup (1/2 cup). Stir well to blend. Taste and adjust sweetness or tartness: add more syrup for sweetness or more lemon for brightness. If desired, dilute with up to 1/2 cup cold water or sparkling water to reach preferred strength and volume.
Serve
Fill two tall glasses with ice (about 1/2 cup ice per glass). Pour the Arnold Palmer evenly into the glasses. Garnish each glass with a lemon slice and an optional mint sprig. Serve immediately.
Variations and storage
For a boozy twist, add 1–2 ounces vodka per serving. Store leftover mixture (undiluted with ice) covered in the refrigerator for up to 3 days; stir before serving and add ice when ready to serve.
