Preparation
Prepare the Marinade
In a bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
Marinate the Tomatoes
Cut the Colorado tomatoes into wedges and add them to the marinade. Toss gently to coat. Let them marinate for at least 30 minutes.
Make the Cashew Cream
Soak 1 cup of cashews in water for at least 4 hours, then drain. Blend soaked cashews with 1/2 cup of water, 1 tsp of lemon juice, and a pinch of salt until smooth.
Prepare the Pickled Shallot
Thinly slice 1 shallot and soak it in a mixture of 1/2 cup vinegar and 1/2 cup water for at least 30 minutes.
Serve
Arrange the marinated tomatoes on a platter, drizzle with cashew cream, and top with pickled shallots and fresh basil.
