Prepare the Swordfish

Pound the swordfish fillets to about 1/2 inch thickness. Season with salt and black pepper.

Set Up Breading Station

Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread the Swordfish

Dredge each swordfish fillet in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Press the breadcrumbs onto the fish to adhere well.

Cook the Swordfish

In a large skillet, heat olive oil over medium heat. Cook the breaded swordfish for about 4-5 minutes on each side until golden brown and cooked through. Remove and keep warm.

Prepare the Rock Shrimp

In the same skillet, add butter and allow it to melt. Add minced garlic and sauté for 1 minute. Then add the rock shrimp and cook until they turn pink, about 2-3 minutes.

Finish the Sauce

Add lemon juice and chopped parsley to the skillet with the shrimp. Stir well to combine.

Serve

Plate the swordfish schnitzel and top with the rock shrimp and lemon butter sauce. Serve immediately.
