In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add the crushed Pale Malt, Crystal Malt, and Carapils Malt to the water and stir well.

Prepare the Mash

Maintain the mash temperature at 152°F (67°C) for 60 minutes. Stir occasionally to ensure even temperature distribution.

After the mash rest, sparge the grains with hot water until you collect 6.5 gallons of wort.

Sparging

Bring the collected wort to a rolling boil. Once boiling, add the Bittering Hops (Chinook) and boil for 60 minutes.

20 minutes before the end of the boil, add the Flavor Hops (Cascade).

5 minutes before the end of the boil, add the Aroma Hops (Amarillo).

After the 60-minute boil, cool the wort quickly using a wort chiller or an ice bath until it reaches 70°F (21°C).

Transfer the cooled wort to a sanitized fermentation vessel.

Transfer to Fermenter

Sprinkle the Dry English Ale Yeast over the surface of the wort and seal the fermenter with an airlock.

Pitch Yeast

Allow the beer to ferment at 68°F (20°C) for about 2 weeks or until fermentation is complete.

Sanitize your bottles and caps. Prepare a sugar solution for priming (typically 3/4 cup corn sugar boiled in 2 cups of water).

Add the priming sugar solution to the bottom of the bottling bucket, then siphon the beer from the fermenter into the bottling bucket. Fill the bottles and cap them.

Bottle the Beer

Let the bottles sit at room temperature for 1-2 weeks to carbonate before refrigerating.
