In a large pot, heat 5 liters of filtered water to approximately 65°C (149°F). Add the wheat malt, pale malt, and caramel malt into the water. Stir well to combine.

Prepare the Mash

Maintain the mash temperature for 60 minutes, stirring occasionally. After 60 minutes, raise the temperature to 75°C (167°F) for mash-out.

Maintain Temperature

After mash-out, sparge the grains with hot water to collect the wort. Bring the wort to a boil, and once boiling, add the Hallertau hops. Boil for 60 minutes.

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches a temperature of about 20°C (68°F).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the German wheat yeast on top of the wort and seal the vessel with an airlock.

Pitch the Yeast

Allow the beer to ferment at a steady temperature of about 20°C (68°F) for 1-2 weeks, or until fermentation has completed.

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer to carbonate.

Prepare for Bottling

Transfer the beer into sanitized bottles, leaving some headspace. Cap the bottles and let them condition for 1-2 weeks at room temperature.
