Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks.
Make the Rub
In a bowl, mix together smoked paprika, brown sugar, salt, black pepper, garlic powder, onion powder, and cayenne pepper to create a dry rub.
Season the Pork
Rub the spice mixture all over the pork chunks, ensuring they are well coated.
Cook the Pork
Place the seasoned pork into a smoker or slow cooker. If using a smoker, smoke at 225°F (107°C) for about 8-10 hours, or until the pork is tender and easily shredded. If using a slow cooker, cook on low for 8 hours or until tender.
Shred the Pork
Once the pork is cooked, remove it from the smoker or slow cooker and let it rest for 30 minutes. Shred the pork using two forks.
Add Sauce
Mix the shredded pork with apple cider vinegar and BBQ sauce until well combined.
Assemble the Sandwich
Place a generous portion of the pulled pork on the bottom half of each burger bun. Top with coleslaw if desired, then place the top half of the bun on.
