Preparation Directions
Prepare the Spicy Coleslaw
In a large bowl, mix together the shredded cabbage, shredded carrot, mayonnaise, hot sauce, salt, and pepper. Adjust seasoning to taste. Set aside to let flavors meld.
Prepare the Catfish
In a shallow bowl, combine the flour, cornmeal, and Cajun seasoning. In another bowl, whisk together the egg and milk. Dip each catfish fillet into the egg mixture, then coat with the flour-cornmeal mixture.
Fry the Catfish
Heat vegetable oil in a large skillet over medium-high heat. Fry the catfish fillets for about 4-5 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.
Prepare the Onion Straws
In the same oil, fry thinly sliced onions until crispy. Remove and drain on paper towels.
Assemble the Sandwich
Toast the sweet potato buns. Place a fried catfish fillet on each bun, top with spicy coleslaw and onion straws. Close the sandwich with the top bun and serve immediately.
