Marinate the Steak

In a mixing bowl, combine olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper. Add the flank steak and ensure it's well coated. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Vegetables

While the steak is marinating, slice the bell peppers and onion into thin strips.

Cook the Steak

Heat a grill or skillet over medium-high heat. Remove the steak from the marinade and cook for about 5-7 minutes per side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes.

Cook the Vegetables

In the same skillet, add a little olive oil if necessary and sauté the sliced bell peppers and onion until they are tender and slightly charred, about 5-7 minutes.

Slice the Steak

After resting, slice the steak against the grain into thin strips.

Warm the tortillas in a skillet or microwave. Fill each tortilla with sliced steak, sautéed bell peppers, and onions. Top with sour cream and guacamole as desired.
