Prepare the Beans
In a small saucepan, heat the canned black beans over medium heat until warmed through. Season with salt and pepper to taste. Set aside.

Cook the Eggs
In a non-stick skillet, heat olive oil over medium heat. Crack the eggs into the skillet and cook to your preferred doneness (sunny-side up or over-easy). Season with salt and pepper.

Warm the Tortillas
In another skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the Huevos Rancheros
On each warmed corn tortilla, layer the black beans, followed by the cooked eggs. Top with cheddar cheese and a generous amount of salsa or ranchero sauce.

Serve
Serve the huevos rancheros with the warm flour tortilla on the side. Garnish with fresh cilantro if desired.
