Tortilla Ingredients

Method

Tortilla Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the flour, salt, and baking powder until well combined.

  2. 2

    Incorporate Fat

Add the lard (or shortening) to the dry mixture and mix with your fingers or a fork until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add the water to the mixture, stirring until a dough begins to form. If the dough is too dry, add more water, a teaspoon at a time.

  4. 4

    Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth and elastic.

  5. 5

    Rest the Dough

Cover the dough with a clean cloth or plastic wrap and let it rest for at least 30 minutes to allow the gluten to relax.

  6. 6

    Divide and Roll

After resting, divide the dough into 8 equal pieces. Roll each piece into a ball and then use a rolling pin to flatten each ball into a thin round tortilla.

  7. 7

    Cook the Tortillas

Heat a skillet or griddle over medium-high heat. Cook each tortilla for about 30 seconds on each side, or until lightly golden and cooked through.

  8. 8

    Keep Warm

Place the cooked tortillas in a clean kitchen towel to keep warm while you cook the remaining tortillas.
