Prepare the Slaw
In a large bowl, combine shredded cabbage, grated carrot, juice of 2 limes, and chopped cilantro. Toss well and set aside to marinate for at least 15 minutes.

Prepare the Battering
In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Gradually add cold sparkling water, whisking until smooth.

Fry the Fish
Heat olive oil in a large skillet over medium-high heat. Dip fish fillets into the batter, allowing excess to drip off. Carefully place the battered fish in the hot oil and fry until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Tacos
Warm corn tortillas in a dry skillet or microwave. Place a piece of fried fish on each tortilla, top with the prepared slaw, sliced avocado, a dollop of sour cream, and hot sauce to taste.
