Mix the Dough
In a large mixing bowl, combine the bread flour and water until no dry flour remains. Add the sourdough starter and mix until incorporated. Let it rest for 30 minutes.
Add Salt
After the resting period, sprinkle the salt over the dough and mix it in by pinching and folding the dough until it is fully incorporated.
Bulk Fermentation
Cover the bowl with a damp cloth and let the dough rise at room temperature for 4-6 hours, performing stretch and folds every 30 minutes for the first 2 hours.
Shape the Dough
Once the dough has doubled in size, turn it out onto a floured surface, shape it into a round loaf, and let it rest for 30 minutes.
Final Proof
After resting, shape the dough again and place it in a well-floured proofing basket. Cover it and let it rise for another 2-3 hours at room temperature or overnight in the refrigerator.
Preheat the Oven
Preheat your oven to 230°C (450°F) with a Dutch oven inside for at least 30 minutes.
Bake the Bread
Carefully remove the hot Dutch oven, place the dough inside (you can score the top for a better rise), cover with the lid, and bake for 30 minutes. Remove the lid and bake for an additional 15-20 minutes until the crust is golden brown.
Cool and Serve
Remove the bread from the Dutch oven and let it cool on a wire rack for at least 1 hour before slicing. Enjoy your homemade sourdough!
