Prepare the Marinade
In a bowl, combine the extra-virgin olive oil, citrus zest, chopped rosemary, fennel seeds, coriander seeds, smashed garlic cloves, and red pepper flakes. Stir well to combine all the ingredients.
Add the Olives
Add the Cerignola olives to the marinade and mix until the olives are well-coated. If desired, add salt to taste.
Marinate
Cover the bowl with plastic wrap or transfer the mixture to a jar with a tight-fitting lid. Let the olives marinate in the refrigerator for at least 24 hours for best flavor, shaking the jar occasionally.
Serve
After marinating, the olives can be served as an appetizer or snack. They can be stored in the refrigerator for up to two weeks.
