Mix the meat

In a large bowl combine the ground chicken, bread crumbs, egg, minced shallot, minced garlic, chopped cilantro, ground cumin, smoked paprika, lime zest, lime juice, kosher salt, and black pepper. Use your hands or a spatula to mix gently until just combined — avoid overworking to keep patties tender. Let the mixture rest 10 minutes in the refrigerator to hydrate the crumbs and meld flavors.

Form patties

Divide the mixture into 4 equal portions (approximately 5 oz each). With wet hands, form each portion into a flat round patty about 3 1/2 inches in diameter and roughly 1/2 inch thick. Press a shallow dimple into the center of each patty to help it cook evenly.

Cook patties

Heat a large skillet or griddle over medium-high heat and add 2 tablespoons neutral oil. When the oil is shimmering but not smoking, add the patties (work in batches if needed). Cook without moving 3–4 minutes until a golden crust forms and the edges begin to brown. Flip and cook another 3–4 minutes until the internal temperature reaches 165°F (74°C). If the exterior is browning too quickly before the center cooks, reduce heat to medium and cover loosely for 1–2 minutes. Transfer cooked patties to a wire rack and tent with foil to keep warm while you prepare the batido and toast buns.

Frita Batido (garlic-lime mayo)

While patties rest, whisk together mayonnaise, sour cream, grated garlic, lime juice, lime zest, hot sauce (or a pinch of cayenne), salt, and pepper in a small bowl until smooth. Taste and adjust acidity or heat: add more lime for brightness or more hot sauce for spice. Chill until ready to assemble. If you prefer a thinner sauce, stir in 1–2 teaspoons water or olive oil to reach desired consistency.

Assembly & Serve

Toast buns: butter the cut sides of the rolls lightly. Heat a clean skillet or griddle over medium heat and toast cut sides down until golden and crisp, about 1–2 minutes.

Build sandwiches: spread a generous tablespoon (or more to taste) of the batido on both the top and bottom bun. Place a handful of shredded iceberg on the bottom bun, add a cooked chicken frita patty, top with tomato slices, a few rings of white onion or pickled onion, and pickled jalapeños if using. Finish with more batido on the top bun and close the sandwich. Serve immediately with lime wedges on the side.
