Place the cooked black beans in a large bowl. Use a fork or potato masher to mash the beans until mostly broken down but still slightly chunky—you want some texture (about 1–2 minutes).

Prepare beans

To the mashed beans add the diced onion, minced garlic, chopped cilantro, ground cumin, smoked paprika, ground coriander, hot sauce, lime juice, salt, and black pepper. Stir to incorporate.

Mix aromatics and seasonings

Add the egg and 3/4 cup of the breadcrumbs to the bean mixture. Stir until combined. If the mixture feels too wet to form patties, add the remaining breadcrumbs a little at a time until it holds together when shaped (total about 1 cup). Taste and adjust seasoning.

Bind the mixture

Divide the mixture into 4 equal portions and shape each into a 3.5–4 inch round patty about 1/2 inch thick. Press gently so they hold together.

Form patties

Heat a large skillet over medium heat and add the vegetable oil. When shimmering, add the frita patties (work in batches if needed). Cook 3–4 minutes per side until a golden crust forms and the patties are heated through. If they brown too quickly, lower the heat and cover for 1–2 minutes to finish cooking. Transfer to a paper towel–lined plate to rest briefly.

Pan-fry

While patties cook, whisk together mayonnaise, Greek yogurt (or sour cream), ketchup, hot sauce, lime juice, smoked paprika, and salt in a small bowl until smooth. Taste and adjust hot sauce or lime. Refrigerate until ready to assemble.

Lightly toast the burger buns in a dry skillet or under a broiler for 1–2 minutes until just golden. Spread about 1 tablespoon of Frita Sauce on both the top and bottom bun.

Assemble the frita by placing shredded lettuce on the bottom bun, top with a black bean frita patty, add sliced tomato and red onion, and scatter pickled jalapeños if using. Spoon an extra tablespoon of sauce over the patty and finish with the top bun.

Garnish each finished frita with a sprinkle of crumbled queso fresco and serve with lime wedges on the side.

Serve immediately while patties are hot and buns are toasted. The fritas pair with the suggested cocktails or beer. Leftover patties can be refrigerated in an airtight container for up to 3 days and gently reheated in a skillet or oven (350°F / 175°C until warmed through).
