Crumble the cotija (or grate the Parmesan) and set aside. If using chorizo, cook it in a skillet over medium heat until fully browned and crisp, about 6–8 minutes; drain on paper towels and crumble. If using bacon, cook until crisp, drain and crumble.

Halve or dice tomatoes, finely dice red onion, chop cilantro, and slice jalapeño if using. Drain minced pickled jalapeños so they don’t water down the chips.

Make the Spicy-Savory Sauce

Combine and Adjust

In a small bowl, whisk together mayonnaise (1/2 cup), Mexican crema or sour cream (1/4 cup), minced chipotle in adobo (1 tsp), smoked paprika (1/2 tsp), minced garlic (1 tsp), fresh lime juice (1 tbsp), salt (1/2 tsp) and black pepper (1/4 tsp). Taste and adjust: add a little more chipotle for heat, more lime for brightness, or a touch of sugar (about 1/4 tsp) if it tastes too sharp.

Assemble the Snack

Arrange 6 cups of thick-cut potato chips on a large platter or shallow serving bowl in a single even layer where possible. Avoid overcrowding so chips stay crispy.

Drizzle the spicy-savory sauce over the chips. Start with about 3–4 tablespoons, then add more in thin lines or dollops where desired so chips remain partially crisp. You can also serve extra sauce on the side.

Evenly scatter the cooked, crumbled chorizo or bacon (3 oz) over the sauced chips.

Sprinkle the drained pickled jalapeños (1 tbs), halved/diced tomatoes (1 cup), and diced red onion (1/4 cup) across the chips.

Generously crumble 1 cup cotija (or grated Parmesan) over everything, then add the chopped cilantro (1/4 cup).

If using, add thin slices of fresh jalapeño for extra heat and a final dusting of 1/4 cup extra cotija or queso fresco.

Squeeze fresh lime (from 1–2 wedges) over the assembled snack right before serving to add brightness.

Serve immediately with extra lime wedges and extra sauce on the side. These pair especially well with a cold Dos Equis, a Frita Margarita, a Ginger–Lime drink with a splash of gin or tequila, or a shaken ginger-lime daiquiri as suggested in the menu note.
