Preheat and prepare pan

Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper and set aside.

In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

Wet mixture

In a separate large bowl, whisk the whole milk and eggs until smooth and slightly frothy.

Whisk in the melted cooled butter and vanilla extract until the mixture is homogeneous.

Make a well in the center of the dry ingredients and pour the wet mixture in. Gently fold with a spatula until just combined — do not overmix; a few small lumps are fine.

Bake & finish

Pour the batter into the prepared pan and smooth the top. Tap the pan gently on the counter to release any large air bubbles.

Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.

Remove from oven and allow the cake to cool in the pan on a wire rack for 10 minutes. Run a knife around the edge, invert onto the rack, remove parchment (if used), then right-side up and cool completely.

Once cooled, dust with powdered sugar, top with fresh berries and a sprinkle of lemon zest if using. Slice and serve.
