Cocktail Base
Chill your coupe or martini glass by filling it with ice water while you prepare the cocktail. Measure and add 2 oz gin, 0.5 oz Green Chartreuse, 0.75 oz fresh lime juice, and 0.25 oz simple syrup to a cocktail shaker.
Wet shake
Add a handful of ice (about 1 cup) to the shaker. Shake hard for 12–18 seconds until the shaker is frosty and well chilled.
Clarifying/Finishing
Strain and rinse
Discard the ice water from the chilled glass. Pour a small amount (about 0.25 tsp) of absinthe into the glass, swirl to coat the inside, then discard any excess. Double strain the shaken cocktail through the fine strainer into the prepared glass to ensure a silky texture and remove ice shards.
Settle and inspect
Allow the foam to settle briefly on top of the cocktail for 10–15 seconds. Inspect for any stray bits and, if necessary, gently wipe the rim with a clean cloth.
Garnish
Express the oils of a lime twist over the surface of the drink by holding the twist over the glass and giving it a quick squeeze, then drop the twist or place the lime wheel on the rim. If using, apply a tiny piece (approx. 0.25 tsp worth) of edible gold leaf to the foam with a clean tweezer or place a small sprig of micro mint on top for color.
Serve
Present immediately to enjoy the bright herbal-lime profile and frothy texture. Advise guests to sip slowly to enjoy the layered flavors.
