Build and shake

Add vodka, fresh lime juice, pineapple juice, orange liqueur, and simple syrup into a cocktail shaker. Fill the shaker with ice (about 3/4 full). Secure the lid and shake vigorously for 10–12 seconds until the shaker is cold to the touch and the liquids are well combined.

Prepare glass

Fill a highball or Collins glass with the measured 1 cup of cubed ice. If you prefer, chill the glass in the freezer for a few minutes beforehand.

Strain and top

Strain the shaken mixture into the prepared glass over the ice. Slowly top with the ginger beer (about 4 oz) so it keeps some effervescence and creates a lively top; gently stir once with a bar spoon to integrate.

Sweetener & Balance

After topping with ginger beer, add two dashes of Angostura bitters across the surface to add aromatic depth and a slight bitter counterpoint to the sweetness. Taste and adjust: if the cocktail needs more sweetness, add another 1/2 tbs simple syrup and stir gently.

Ice & Garnish

Garnish the cocktail with a lime wheel on the rim. If using candied or crystallized ginger, skewer the piece and rest it across the top of the glass or drop it in as an aromatic nibble. Serve immediately while effervescent.
