    Prepare the Marinade

    In a small bowl, combine minced garlic (4 cloves), chopped fresh rosemary (2 tbs), olive oil (4 tbs), salt (2 tsp), black pepper (1 tsp), apple cider vinegar (3 tbs), and honey (1 tbs). Mix well until all ingredients are blended.

    Marinate the Pork

    Rub the Mangalitsa pig shoulder (2 kg) with the marinade thoroughly. Ensure the marinade gets into the crevices of the meat. Cover and let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 160°C (320°F).

    Prepare for Roasting

    Take the marinated pork out of the refrigerator. Place it in a roasting pan. Pour water (500 ml) into the bottom of the pan to keep the meat moist during cooking.

    Roast the Pork

    Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for about 3 hours, or until the internal temperature reaches 70°C (160°F).

    Finish Roasting

    Remove the foil for the last 30 minutes of cooking to allow the skin to crisp up. Keep an eye on the water level, adding more if necessary to prevent burning.

    Rest and Serve

    Once cooked, take the Mangalitsa pig shoulder out of the oven and let it rest for about 15-20 minutes before slicing. Serve warm with your favorite sides.
