    Prepare the Marinade

    In a bowl, combine olive oil, salt, black pepper, minced garlic (2 cloves), honey, soy sauce, and rice vinegar to create a marinade. Mix well.

    Marinate the Short Ribs

    Place short ribs in a large resealable bag. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag and refrigerate for at least 4 hours or overnight for best flavor.

    Prepare the Oxtail Jus

    In a large pot, add oxtail and cover with beef stock. Bring to a boil, then reduce heat and simmer for about 3 hours, or until the oxtail is tender and the flavors meld.

    Grill the Short Ribs

    Preheat the grill to medium-high heat. Remove short ribs from the marinade and discard the marinade. Grill the ribs for about 5-7 minutes per side, or until they reach desired doneness.

    Prepare the Peanut Topping

    While the ribs are grilling, finely chop the peanuts. Set aside for serving.

    Once the ribs are grilled to perfection, remove them from the grill and let them rest for a few minutes. Serve the short ribs with the oxtail jus drizzled over top and sprinkle with chopped peanuts.
