Pasta and Clams
Method
Cooking Instructions
- 1
Prepare the Clams
In a large bowl, soak the fresh clams in cold water for about 30 minutes to remove any sand. Rinse thoroughly under cold running water and set aside.
- 2
Cook the Pasta
In a large pot, bring salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
- 3
Sauté Aromatics
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallots. Sauté for about 2-3 minutes until fragrant and translucent.
- 4
Add Clams and Wine
Add the soaked clams to the skillet along with the white wine. Cover the skillet and cook for about 5-7 minutes until the clams have opened. Discard any clams that remain closed.
- 5
Combine Pasta and Clams
Add the cooked fusilli pasta to the skillet with the clams. Toss everything together, adding reserved pasta water a little at a time until a light sauce forms.
- 6
Season and Serve
Stir in the chopped parsley, red pepper flakes, salt, and black pepper to taste. Serve immediately, garnished with extra parsley if desired.
