Prepare the Salmon

Preheat your wood grill to medium-high heat. Lightly brush the salmon fillets with olive oil and season with salt and black pepper.

Grill the Salmon

Place the salmon fillets skin-side down on the grill. Grill for about 5-7 minutes per side or until the salmon is cooked through and has nice grill marks.

Prepare the Romesco Sauce

In a blender, combine roasted red peppers, almonds, garlic, olive oil, vinegar, and spices. Blend until smooth.

Make the Red Chile Nage

Simmer chicken stock with dried red chiles until softened. Blend until smooth and strain for a silky sauce.

Prepare the Lobster Taquito

Mix cooked lobster meat with spices and roll in corn tortillas. Fry until crispy.

Chimichurri Cauliflower

Toss cauliflower florets with chimichurri sauce and roast in the oven until tender.

Plate the Dish

On a plate, place the grilled salmon, drizzle with romesco and red chile nage, add lobster taquito, chimichurri cauliflower and garnish with charred lemon slices, saffron emulsion, chives, and a drizzle of chili oil.
