Cooking Instructions

1

Prepare Chicken

Marinate the chicken breasts in olive oil, ancho chili powder, salt, and black pepper for at least 30 minutes.

2

Grill Chicken

Grill the marinated chicken on medium-high heat for about 6-7 minutes per side or until fully cooked. Remove from heat and let it rest.

3

Make Ancho Red Wine Sauce

In a saucepan, combine red wine, garlic, and any remaining ancho chili powder. Reduce on medium heat until thickened, about 10 minutes.

4

Prepare Green Chile Avocado Risotto

In a pot, sauté garlic in olive oil. Add Arborio rice and stir for 2 minutes. Gradually add vegetable broth until rice is creamy and tender. Stir in green chilies and diced avocado.

5

Make Chimichurri Butter

In a bowl, combine softened butter, chopped parsley, lime juice, and minced Fresno peppers. Mix well and set aside.

6

Cook Garlic Green Beans

In a skillet, sauté green beans with olive oil, garlic, and sliced Fresno peppers until tender, about 5-7 minutes.

7

Serve

Slice the grilled chicken and serve it on a plate with avocado risotto, green beans, and drizzle with ancho red wine sauce and chimichurri butter.
