Cooking Instructions
Prepare the Broth
In a saucepan, bring the chicken or seafood broth to a simmer. Keep it warm over low heat.
Sauté Vegetables
In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and corn kernels, cooking for another 2 minutes.
Toast the Rice
Add Arborio rice to the skillet and stir for 2-3 minutes until the rice is lightly toasted.
Add Wine
Pour in the white wine and cook, stirring until the wine is mostly absorbed.
Incorporate Broth
Begin adding the warm broth, one ladle at a time, stirring continuously. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
Add Lobster and Cheese
Stir in the lobster meat, remaining butter, and grated Parmesan cheese. Season with salt and black pepper to taste.
Garnish and Serve
Remove from heat, stir in chopped parsley, and serve immediately.
